Wheat berry salad

The theme of my cooking class last week was grains. We talked about rice, quinoa, barley, and wheatberries. I made my favorite of the dishes we cooked/sampled tonight and it was delicious.

Wheatberry salad

1 1/2 cups wheatberries
16oz spinach
1/4 cup parmesan cheese
1/4 cup sundried tomatoes
1 can white beans
1/4 cup walnuts
Juice of half a lemon.

(all measurements are somewhat approximate)

Place wheatberries in a saucepan and cover with water. Bring to a boil and simmer for 40-50 minutes.

Meanwhile, saute spinach with shallots and garlic until wilted.

Drain wheatberries and add spinach, beans, sundried tomatoes, walnuts, and parmesan. Mix together. Season with salt and pepper and squeeze half of a lemon over the salad.
